Based on our Sep-09 experience
1. You will find food. Some refugees will have more than the others. Water is not an issue you will find a source next to each refugee.
2. Be prepared for walking in rain. Buy an inner liner for your rucksack to keep you clothing and sleeping bag dry. You might find yourself walking in the rain for hours.
Don't get into the 4th stage if it heavily rains, could be dangerous.

I just got back so I thought I'd share some info:
1. There is a guard in the refuges untill the end of September. So there will be food, only is the offer bigger in some then in others. And well, the guy in the Di Mori refuge only sold snacks (twix, mars, coke), and no pasta, tomato sauce, tuna, etc. like in most others. He said that if he would sell food, then nobody would buy the dinners he offers at 12 or so Euro...
2. Yes be prepared for rain. I agree, the 4th stage with the cirque de la solitude is risky in heavy rain. We got caught in a thunderstorm with hail as we reached the Bocca Tumasginesca (we went South - North). The trail became a waterfall. That evening we met the others that were there behind us and they reported big rocks falling down right next to them... but luckily nobody got hurt.
